The People Behind the Pantry

Meet the Producers

We do not sell anonymous Greek food. Every product here comes from a producer we can name, in a region we can point to on a map.

Laconia, Peloponnese

Sparta Gourmet

Koroneiki olives cold-extracted at low temperature, then held in nitrogen-flushed stainless tanks until bottling. The Premiere is lab-certified at 522 mg/kg polyphenols.

Almyros, Thessaly

Roussas

A dairy making cheese since 1952, rooted in Sarakatsani shepherding tradition. Barrel-aged PDO feta from sheep and goat milk, and a graviera made entirely from sheep’s milk.

Agios Panteleimonas, Florina

Petros Naoumidis

Grew up in his family’s restaurant kitchen, then built the Piperoktima — a stone-built, energy-independent pepper farm at 610m on the slopes of Mount Voras, fenced off from neighbouring crops so the Florina variety cannot cross-pollinate. He grows his own seed.

Mount Othrys, Thessaly

Othrys Farms

Wild-harvested oregano (Origanum vulgare subsp. hirtum) and Sideritis mountain tea, gathered from the slopes of Mount Othrys rather than cultivated in rows.

“I loved this cheese, to the point that I never liked any cheese at all in 41 years of hating all cheese. Once I tried it, it opened my world to cheeses again.”

Family-Owned Since 2016

Our co-owner Giannis Sfakianoudis is from Chios, and he and his family return to the island every year during harvest season.

Our Story

Alpha Omega Imports was founded in Timonium, Maryland in 2016 by two partners with roots on opposite ends of Greece. Petros Dimakis comes from a farming family in Martino Lokridas. Giannis Sfakianoudis is from Chios, and he and his family still return to the island every year during the mastiha harvest.

That is not a marketing line. It is the reason we can tell you which dairy aged your feta, which basin grew your peppers, and what a lab measured in your olive oil. If a product cannot be traced to a producer, a region and a tradition, it does not go in the catalogue.

Frequently Asked Questions

Still have a question? Email sales@alphaomegaimport.com and a person will answer.

How is Alpha Omega different from Greek food at the supermarket?
We buy from named producers and we publish who they are. Our olive oil comes from Sparta Gourmet in Laconia, our feta and graviera from the Roussas dairy in Almyros, our peppers from Petros Naoumidis in Florina, our balsamic from Domaine Costa Lazaridi in Drama. Supermarket Greek food is usually blended from anonymous sources, so the label can say Greece without telling you anything else.
What does PDO mean, and which of your products carry it?
PDO stands for Protected Designation of Origin, an EU scheme that legally restricts a food name to a defined region and production method. Feta has been PDO-protected since the EU rulings of 2002 and 2005, so genuine feta must be made in specific Greek regions from sheep's milk or a sheep and goat blend. Not everything we sell is PDO, and we do not claim otherwise. Individual product pages state which certifications each item actually carries.
What is polyphenol count in olive oil and why does it matter?
Polyphenols are naturally occurring compounds in olives that survive into the oil depending on the olive variety, the harvest timing and how gently the oil is extracted. They are what you taste as the peppery catch at the back of the throat. Our Sparta Gourmet Premiere is independently tested at 522 mg/kg under certificate C2526-00733. Our Gourmet line sits in the 350 to 500 mg/kg range and is intended for everyday cooking.
Should I cook with high-polyphenol olive oil or only use it raw?
Use the Premiere raw, as a finishing oil on bread, salads, grilled vegetables and soups, where the aroma and the pepperiness come through. For frying, roasting and everyday cooking, the Sparta Gourmet line is the sensible choice and considerably better value per litre.
Do you ship nationwide, and when is shipping free?
We ship across the continental United States from Timonium, Maryland. Shipping is free on orders over $85. Orders normally leave our warehouse within 24 to 48 hours and you receive tracking by email.
Can I buy wholesale for my restaurant or shop?
Yes. We supply restaurants, delis and specialty retailers alongside our direct customers. Email sales@alphaomegaimport.com with what you are looking for and the volumes you have in mind.
