- 1 lb fresh spinach leaves, washed and chopped
- 1 medium onion, finely chopped ๐ง
- 2 green onions, chopped
- 2 cloves garlic, minced
- 200g Roussas PDO Feta Cheese โ Add to Cart

๐จ๐ณ Instructions
- Sautรฉ the onions and garlic in 2 tbsp Sparta EVOO until soft and fragrant.
- Add the spinach and cook until wilted. Drain any excess liquid and let cool slightly.
- In a large bowl, mix spinach with crumbled Roussas Feta, dill (or Eliovi Herb Blend), eggs, salt, and pepper.
- Brush a baking dish with Sparta EVOO. Layer half the phyllo sheets, brushing each with olive oil.
- Spread the spinach-feta mixture evenly over the phyllo base.
- Cover with remaining phyllo sheets, again brushing each with olive oil.
- Score the top with a sharp knife and drizzle a little more Sparta EVOO.
- Bake at 180ยฐC (350ยฐF) for 40โ45 minutes, until golden and crisp.
- Serve warm or at room temperature.
